"atta man!" (similar to "atta boy!" as an expression of congratulations for something accomplished)
patty-cake patty-cake baker-man (from the old kid's rhyme, but I'm not sure if it's "baker-man" or "baker's-man"... my family always said "baker's man", but that doesn't seem gramatically correct to me)
some popular medicines also rhyme with "man" like:

I don't have an exhaustive list, and you can find some more I bet!
I would also like to add that you can use things that aren't "true rhymes" sometimes (though if a teacher wants rhymes, DON'T GIVE THEM THESE!!):
things that rhyme with "and" (land, band, sandetc)
things that rhyme with "ain" (again, etc, sometimes these can be pronounce either like the English pain with an AYN sound, or like the French pain which is i think their word for bread, which sounds more like the way we pronounce PAN)
things that rhyme with "ant" (this is a stretch, a real stretch, I'd probably never do this, unless writing a poem in which the perfect word was not a true rhyme and i wanted to create a disconnected feeling or mood somehow)
