I am 71, a cook, doc says I am allowed no more than 2000mg sodium/day. I don't do "health", I do love my food.
I make a pepper steak thing -- fresh ginger root, fresh garlic, a bit over 1/3 cup of soy sauce, strips of round steak (a bit under a pound,) marinated for a couple of hours. Celery, green onion, bell pepper, roma tomato, serve on a bed of rice. Fabulous! Should serve four, I do for three. Whatever! Soy Sauce is salty, even the less sodium version is salty. The meat is drenched in soy, poured on, nearly 3000mg sodium. Divided in three and I am still under the half of my daily sodium limit. Even if I use the regular I am still under my sodium limit.
Yes, salty. But you don't do a lot of the sauce in a meal. Hence, not unhealthy.
Healthy because it is fermented -- big whoopie. Screw healthy! You only get one life, you will die, enjoy life, enjoy your food.
