Can you feed a cat solely chicken?

My cat went to the vet today, and while hes on a bit of antibiotic, they tried to sell me the prescription diet. No sir. So I will have to get raw going. I have a local store that carries chicken liver and hearts. This cat has had it before in the past, long story. But he will ONLY eat grinds. There's going to be a while before I get a meat grinder, and I do not have a local butcher, the closest one is 30 minutes away.

So I will be buying pre ground, doing the math and ratios, then blending the other bits and adding however much etc etc. I already have my bone supplement.

But can I just do chicken?

I know with dogs, it turns their feces yellow and you're supposed to mix up the protein sources.
Update: I am curious about you few saying its incomplete and not telling me how or why it's incomplete.
